Pepsin is extracted from the gastric mucosa of animals. It functions as an endopeptidase and could hydrolyze protein under acidic conditions. It is widely used in multiple fields, such as biochemicals, feed, food, leather, and others.
Pepsin, as an endopeptidase, cleaves peptide bonds in the interior of protein molecule, generating smaller ones, such as peptones, polypeptides, and amino acids. It shows a preference for peptide bonds adjacent to leucine and aromatic amino acids such as phenylalanine, tyrosine, and tryptophan.
